I love the Instant Pot so much, that I actually have FOUR of them and I can hardly keep them on my shelves! It seems like I’m constantly cleaning them and then getting them back out to cook the ‘next’ thing on my menu plan!
The ‘IP’ is so versatile and can make as many things as my mind can imagine!
Since my family has so many food allergies, I can make up something quick and simple that will fit my family member’s needs.
I’m tell everyone that I know and love that they need an Instant Pot!
Once you buy your ‘IP’, I KNOW you’ll wanna make something right away!

I highly recommend using your IP for cooking once a month. It’s a great way to get rid of some of the overwhelming feelings that come with cooking for your family. Your new IP will pair nicely with, (affiliate) Once a Month Meals which has so many options for varying diets.

Non-Dairy Rice Pudding
Chicken Enchilada Soup (my absolute favorite recipe and PACKED full of veggies!) I couldn’t find a recipe so here you go:
Put one bag of frozen chicken breasts in your IP. Chop up celery, carrots, butternut squash, a sweet potato and an onion. Add 1 T of cumin, 1 tsp salt, 1 tsp pepper, 1-2 tsp chili powder, (if you’d like) 2 tsp oregano and fill to the max line with water. Do NOT go over. Trust me on this one! 😉 And this would be the point where I would recommend the 8 quart IP!
Place everything inside the IP and set the it to ‘manual’ and 9 minutes. Do a quick release when it’s done.
